Oatmeal and Carrot Muffins of grand’ma

✅ Ingredients

 

2 cups rolled oats

 

4 carrots (grated)

 

2 eggs

 

1 cup unsweetened almond milk

 

1 1/2 teaspoons ground cinnamon

 

2 teaspoons baking powder

 

1 1/2 teaspoons vanilla extract

 

3–4 tablespoons natural sweetener (honey)

 

A pinch of salt

 

 

Healthy Frosting

 

3/4 cup plain yogurt

 

1 teaspoon vanilla extract

 

Sweetener to taste

 

 

👩‍🍳 Preparation

 

1. Place the almond milk, oats, eggs, vanilla, and sweetener in a blender.

 

2. Blend until you have a thick, smooth batter without lumps.

 

3. Add the grated carrot, cinnamon, baking powder, and salt.

 

4. Mix until combined: the mixture should be thick.

 

5. Pour the mixture into a cupcake pan:

 

fill each cup 3/4 full.

 

6. Bake at 180°C (350°F) for 20–25 minutes.

 

8. Remove when the center is firm and cooked through.

 

 

 

Healthy Frosting

 

Mix the plain yogurt, vanilla, and sweetener until smooth and creamy.

 

 

 

Decoration

 

Pipe a rosette onto the cupcakes.

 

Sprinkle with grated carrot.
